Lonzino is a very lean cold cut, with a typical thin and cylindrical shape.
It is bright red in colour with slight white streaks of fat and stands out for its particularly delicate fragrance, which can also be somewhat spicy, with a typically savoury flavour, but not salty.
It is obtained from the loins of pigs born and slaughtered in Emilia Romagna, of course wrapped and tied with a string.
